In English, the existence of 'pork' reveals a bit about history and culture, and in its own way the same is true for the Chinese 肉 (ròu) meaning 'meat' or 'flesh'. In China, the most popular meat, by far, is pork, so much so that it is generally taken that when not specified 肉 simply means 'pork'.
